     Title: Tin Plate Special

      1 lb Dry pinto beans                     6 lb Beef rump roast 
      1 T  Lard or shortening                  1 c  Green or banana pepper strip 
      2 x  Sliced med. onions                  2 c  Tomato juice 
      8 oz Can tomato sauce                  1/2 c  Water 
      2 t  Cider vinegar                       2 T  Brown sugar 
      2 t  Salt                                1 t  Dry mustard 
      1 t  Thyme                         
 
  Wash beans;cover with cold water and let soak overnight. Bring beans to a
  boil and cook 1 hour; drain, discarding water. Brown roast in hot fat in a
  Dutch oven or roaster. Add peppers and onions and cook until tender. Add
  beans and remaining ingredients. Cover and bake in a 350 deg. oven for
  2 1/2-3 hours or until beans are tender and meat is done.

     Title: Spike Steak

      2 x  Inch thick sirlion steaks           1 T  Black peppercorns 
      2 x  Cloves garlic, minced               4 c  Coarse salt 
    3/4 c  Water                         
 
  Trim execess fat from steak. Crack peppercorns coarsely and conce garlic.
  Press peppercorns and garlic into both sides of steak and let stand at room
  temperature for 1 hour. Make a thick paste of salt and water; cover top
  side of peppered steak with half the mixture. If cooking steak over coals
  cover salt side with a wet cloth or paper towels and place salt side down
  on grill.(Cloth or paper holds the salt in place;will char as the steak
  cooks, but this does not affect the taste.) Cover top side with remaining
  salt mixture and another piece of wet cloth or papper towel. If broiling,
  put salt side up, 3 in. from heat. Put salt on other side of steak when it
  is turned. Cook 15 mins. on each side for rare, 25 mins. for med. rare.
  Remove salt before eating.

  Melt butter in a saucepan; add onion and garlic and cook slowly until is
  soft. Add remaining ingredients and beat to mix.

     Title: Barbecue Beef Ribs

      5 lb Beef short ribs                     3 c  Black Jack BBQ Sauce 

  Place ribs in a flat pan or dish. Pour sauce over ribs, turning so as to
  coat both sides; pierce meat with a large fork. Marinate 8 hrs. turning
  once. Remove ribs from marinade and brush off excess sauce to avoid burning
  Broil or cook over coals for 10 mins. Brush with marinade and cook 4-5
  mins. more. Heat remaining sauce and serve with ribs.(Ribs may be cooked in
  a covered pan in a 350 deg. oven for 1 1/2 hours, if desired.)

  Combine all ingredients in a saucepan and simmer 25 mins. Strain or puree
  in a blender or food processor. Refrigerate between uses.

  2 1/2 lb Beef cubes.(5 cups)                 2 T  All-purpose flour 
      1 T  Paprika                             1 t  Chili powder 
      2 t  Salt                                3 T  Lard 
      2 x  Sliced onions                       1 x  Clove garlic, minced 
     28 oz Can tomatoes                        3 T  Chili powder 
      1 T  Cinnamon                            1 t  Ground cloves 
    1/2 t  Dry chrushed red peppers            2 c  Chopped potatoes 
      2 c  Chopped carrots               
 
  Coat beef in a mixture of flour, paprika,1 tsp. chili powder and salt.
  Brown in hot fat in a large Dutch oven. Add onion and garlic and cook until
  soft. Then add tomatoes, chili powder, cinnamon, cloves and peppers. Cover
  and simmer 2 hrs. Add potatoes and carrots and cook until vegetables are
  done, about 45 mins.

  1 1/2 oz Package onion soup mix            3/4 c  Hot water 
      1 pk Dry yeast                           2 T  Sugar 
      2 T  Warm water                          1 x  Egg 
      2 x  Recipies Dry Baking Mix             1 c  Sourdough Starter 

  Add soup mix to 3/4 cup hot water;let stand until lukewarm. In a separate
  container, soften yeast and sugar with 2 tablespoons warm water.Beat soup
  mixture and yeast mixture together with egg, 1 cup Dry Baking Mix and
  Sourdough Starter. Stir in remaining Dry Baking Mix to make a stiff dough.
  Place on a floured surface;knead until smooth and elastic. Place in a
  greased bowl, turning to grease top. Cover and let rise for 2 hrs. Shape
  into a round loaf. Place on a greased pan, cover and let rise 45 mins. Bake
  in a 375 Deg. oven for 35 mins.

  2 1/2 c  All-purpose flour               1 1/2 c  Sugar 
    1/2 c  Cocoa                               2 t  Soda 
    1/2 t  Salt                              2/3 c  Cooking oil

      2 c  Cold water or coffee              1/4 c  Sugar 
    1/2 t  Cinnamon                      
 
  Put flour, 1 1/2 cups sugar, cocoa, soda and salt into an ungreased 13X9X2
  inch metal baking pan. Stir with a fork to mix;form 3 wells in flour
  mixture. Pour oil into one well, vinegar in one and vanilla in one. Pour
  cold coffee over all ingredients and stir with fork until well mixed. Do
  not beat. Combine remaining sugar and cinnamon;sprinkle over batter. Bake
  in 350 deg. oven for 35-40 mins.

     Title: Dried Apple Cakes

    1/2 lb Dried apples, chopped               4 c  Water 
      1 c  Sugar                               1 x  Recipe Dry Baking Mix 
  1 1/2 c  Sourdough Starter                 1/2 c  Brown sugar 
      1 t  Cinnamon                          1/2 t  Nutmeg 
    1/4 c  Butter                        
 
  Cook dried apples in 4 cups water until tender.Drain and save juice.
  Measure 2 cups juice, adding water if needed. Mix 1/4 cup sugar with Dry
  Baking Mix;stir in Sourdough Starter to moisten flour. Turn out onto a
  floured surface, knead lightly;pat or roll to a 12X18 inch rectangle.
  Sprinkle with apples. Roll, starting at short end;cut into 12 slices. Put
  remaining sugar, brown sugar, cinnamon, nutmeg, butter and the 2 cups
  apple liquid into a large deep skillet. Bring to a boil. Gently lower
  apple slices into hot syrup. Bake in a 375 deg. oven for 35-40 mins.
