170° for 27-30 min/lb.

Rolled Rib (add 10-15 min / lb.)

Center Cut Chuck -- cook at 
150°-170° for 25-30 min/lb.

Rump Roast -- cook at   
150°-170° for 25-30 min/lb.

at 425°F

Tenderloin -- cook at 
140°-160° for 45 - 60 min total.
