Old technique.
Several decades ago there was an analog electronic music generator that
used hand motion to generate tones.   It used attennas that sensed the
capacitance of the body.  I think I built one once from a Popular Science
description.  With good hand control you could generate anything from traditional
scales to special sound effects.  With several attennas you could do chords.
