 
 Shrimp and Mushrooms Flambeby Lucia Chambers
 
      
                PREPARATION TIME:  10 minutes
                COOKING TIME:  10 minutes
      
                INGREDIENTS (for 4):
      
                1/2 pound small cooked shrimp
                1/2 pound mushrooms
                3 tablesppons unsalted butter
                pinch nutmeg
                black pepper
                4 slices whole wheat bread
                2 tablespoons brandy
            
                    Trim and wipe the mushrooms; slice them
            thinly.  Melt the butter in a small skillet and
            cook the mushrooms for 2 - 3 minutes, or until they
            are slightly softened.  Add the shrimp to the pan and
            stir over moderate heat until they're heated through.  
            Season to taste with a little nutmeg and a few twists
            of freshly ground pepper.
                    Toast the bread slices and arrange them on
            individual warmed serving plates; keep warm.
                    Warm the brandy in a small pan, pour over
            the shrimp, and set alight.  As soon as the flames have
            died down, spoon the shrimp and mushroom mixture onto
            the hot toast and serve immediately.
